Veggie Sausage Dinner Skillet

Servings: 4 - 6

1 medium sweet potato (about 3/4 pound), peeled and diced
2 medium potatoes, scrubbed and diced
2 tbsp water
1 medium onion, diced
2 cloves garlic, minced
1 bay leaf
1 tbsp Italian Seasoning
1 apple, diced (preferably a tart variety, like granny smith)
1 lb carrots, sliced
1 package LiteLife Gimme Lean Sausage style
28 oz can diced tomatoes
1/2 to 1 cup water
black pepper to taste

1. Place sweet potatoes and potatoes in a pot of boiling water and cook for 5 minutes. Drain and set aside.

2. In a large non-stick skillet, sauté onions for 5 minutes. Add in "sausage" and garlic and continue cooking until slightly browned.

3. Add bay leaf, Italian seasoning, apple, carrots, tomatoes and water and simmer for 15 minutes, or until carrots begin to soften.

4. Add potatoes and simmer for 10 more minutes. Add pepper to taste.
