Kidney Bean and Peach Cake

Today is burger day at our house and I'm getting sick of Bocas and lentil/oat burgers, so I looked around my Mastercook and found this one.  Looks, well, *interesting* and different. I'll use cooked dried beans instead of canned to cut down on the salt.

And if nobody likes it, we'll just remember my hubby's motto - everything tastes great smothered in ketchup! LOL

15 ounces canned kidney beans -- rinsed and drained
1 pound canned peaches -- drained
1 cup unbleached flour
1/4 teaspoon cumin
salt and pepper -- to taste

Place all ingredients into the bowl of a food processor, then blend for 2 minutes.

Pour batter to form 5 burgers in a non-stick skillet and fry over medium heat for 5 minutes per side.

Serve on a bun as a burger or on a plate with side dishes as an entree.
